Ingredients

Instructions
In a large skillet over medium heat, crumble the breakfast sausage and cook it for 5–7 minutes or until it’s browned and fully cooked. Transfer it to a paper towel-lined plate to drain any excess grease.
Using the same skillet (no need to waste those flavorful bits!), melt the butter over medium-low heat. In a bowl, whisk together the eggs, milk, salt, and pepper until smooth. Pour the egg mixture into the skillet and let it cook undisturbed for a few seconds to set the edges. Then gently stir, pulling the eggs from the edges toward the center. Cook until just done—soft and creamy is the goal.
Once the eggs are cooked, stir in the sausage and shredded cheddar cheese until well combined. Lay your tortillas out flat and spoon the mixture into the center of each one.
Fold in the sides of each tortilla, then roll from bottom to top into a snug wrap. If you like a bit of crisp on the outside, place them seam-side down in a dry skillet over medium heat and toast for a couple of minutes until golden.
Serve immediately for best results, or wrap them in foil for an on-the-go breakfast. They’re also fantastic with a dab of hot sauce or a spoonful of salsa on the side.
